INGREDIENTS:
Milk: 1 lt (boil to make it half 500ml)
Maida/flour: 1/4 cup
Suji/semolina: 1/4 cup (little roasted)
Saunf/fennel seeds: grounded 1 tsp
Oil: to fry
Sugar syrup: Dissolve 1 cup sugar in 1/2 cup water. Cook to make 1 thread consistency. (One-thread consistency is when a single thread is formed between forefinger& thumb without breaking when your forefinger and your thumb are pulled apart gently)
METHOD:

METHOD:
1. Take flour, suji/semolina (slightly roasted) & 1 tsp saunf/fennel seeds (grounded) in a bowl.
2. Cook milk on medium heat till it thickens and becomes half the amount. (You may substitute some milk with cream/malai or try ready-made evaporated milk as its already thicker than plain milk )
3. Add the thickened milk to the dry ingredients in the bowl and mix all to make a smooth batter.
4. Take the batter in a glass or the measuring flask/jug & pour small amounts into the heated oil in an open style frying pan, in a circular movement. (You may also pour the mixture with help of big spoon into the oil)
Let it brown lightly & turn it over gently with help of sharp flat edge spatula, without breaking it. (there maybe some sticking of the malpua at the bottom, but scrape it off with spatula & turn it over) Don't let it over brown or get hard/crispy.
Make few at a time to allow space for turning over.

Make sugar syrup in some open kind karahi/pan & dip the puas into it. Turn them over & then after 5 min take them out into a dish for serving or storing.
Garnish with chopped or shredded almonds/cashews or pistachios (optional) You may sprinkle little cardamom powder for flavor.
