Moong whole are very nutritious when soaked & sprouted as they are very rich in fibre, vitamins & nutrients. This snack is very tasty especially if you have an urge to eat something hot & fried..instead of other pakoras, samosas, tikkis etc..this is a better option.
1. Prepare moong sprouts: Soak Moong dal a night before & next day wrap in fine moist cloth in a bowl. Sprouts will appear in a day. Grind coarsely in mixie along with 2 green chillies & ginger piece
Make vadas: Remove any extra water. Add salt, garam masala, choppped coriander & few curry leaves, & red chilli pd.

FRY: Slide them slowly in hot oil (medium heat) in a shallow karahi/pan. (few at a time). Brown them on both sides & drain them on paper napkin. Serve hot with ketchup or chutney.

TIP: Another simple healthy way to eat moong sprouts is to just pressure cook them (1 whistle) with some grated ginger & salt, in very little water. Mix in chopped tomatoes, onions, green chillies, coriander. Squeeze lemon juice & serve warm for breakfast or tea. No frying in this. I make this often & it tastes very good....very healthy!!
