INGREDIENTS:
Black beans: 1 can
onions: 1 cut into half & sliced thinly
Tomatoes: 1 chopped
Capsicum: 1 cut into half & sliced lengthwise
Hot Salsa:
Rice: brown or white cooked 1 cup (optional)
Taco seasoning: make your own or buy from store.
Tortillas: (white or whole wheat) medium 4-6
1. Empty out the black bean can in a strainer & wash a little under tap water to get rid of preservatives etc.
2. In a big pan, add little olive oil, & add onions chopped. Stir for few sec. & add Capsicum. Saute a little. Add crushed red pepper & oregano. Add rice & some taco seasoning. (make your own; recipe given on this website; just click on the pic of seasoning on the side margin to go on the page) Stir & add the beans & tomatoes. Mix all & Keep aside.
3. Heat the tava or griddle; place the tortilla & heat it on both sides. Spread some stuffing in the center. Put some hot salsa on it & wrap the tortilla to form the burrito. You may cut in the center & serve hot.
OPTION: You can replace black beans with baked beans & add some fresh veggies you like e.g chopped brocoli, red capsicum, jalapenos/green chillies & cilantro etc.
