EASY STEPS for TACOS: (Buy a pkt/box of taco shells as shown)
1. Chop tomatoes, spring onions or onions, green chillies/jalapeno, some coriander leaves (optional). Shred some lettuce too.

2. Take canned black beans (drain out the excess water) or overnight soak & pressure cook some beans (store in fridge for future use). Add some taco seasoning to it. (see recipe at the end)
3. Add the chopped vegetables to the beans EXCEPT coriander (if using) & shredded lettuce. (if non-veg; add cooked chicken pieces to the beans or replace beans with cooked chicken pieces. You can cook in microwave with some taco seasoning. Recipe given at the end.)
4. Place the bean-vegetable stuffing in the shells.

5. Make Salsa or buy ready-made (click on the pic to see my recipe for simple salsa)

Sprinkle grated Mexican cheese (yellow & white) on it. Place the shells in the microwave for 1-2 min. for cheese to melt & heat the contents. Sprinkle shredded lettuce & some chopped coriander leaves in the opening of each shell & serve hot.
NOTE: You can add Ranch sour cream dressing or Caesers salad dressing/ mayonaise etc according to your taste & liking.
