Take a big eggplant and cut round thin slices. Dip each one in egg white & roll in bread crumbs so it sticks on both sides. Keep in a plate & fry them in little oil till deep brown & crispy. Keep aside on tissue paper.
Place them in a baking dish. Pour some ready-made Pasta sauce on it to cover the sides & top. Sprinkle grated cheese & again place other slices on top. Repeat sauce & cheese on top. Bake in pre-heated oven at 375 degrees for 10 min & then broil for a min for some browning. Serve hot.
Place them on a dish. You may add crushed red pepper for extra zing. ENJOY!!!
