STEP 1: Take 5-6 small or medium Tortilla flat breads/rotis/flour chapattis. You can slightly grill them on pan or just use as it is from pkt. Spread them on the counter top.
STEP 2: Gather these ingredients:
Small Can of Baked beans or refried beans or black beans, Enchilada sauce can, fine chopped capsicum, tomato & onion. (You can add baby spinach too & chopped green chillies/Jalapeno optional)

STEP 3: On each Tortilla roti/bread, spread lengthwise in center 2 Tbs of bean, some chopped mix veggies, Spinach (optional) & some grated cheese (optional). Wrap them in a roll & keep aside. Pour some enchilada sauce & spread at the base of the dish. Keep each roll or tortilla wrap flat as shown in the baking dish with sauce at bottom.
STEP 4: Pour rest of the enchilada sauce over the rolls. Spread grated Mexican cheese on top as shown. Put it in an oven for baking at 375 deg F. for 35-40min.
STEP 5: The cheese melts on top & the rolls get baked. Now just serve one roll at a time on a plate & DIG in!! ENJOY!!! CAREFUL...its super hot inside!!
