Buy a packet of Mexican Corn Tostadas or flattened big round corn chips.
Ingredients:
Refried veg beans (looks like boiled mashed small red kidney beans): 1 small can
Tomato: 1 chopped
Onions: 1 chopped
coriander leaves
Salsa: Hot/medium salsa

1. Take paper plate or microwavable plate with 2-3 tostadas. Spread the mashed beans on the tostada chips.
2. Spread chopped tomatoes & onions, some coriander leaves & salsa as shown in the pic.
3. Spread grated Mexican cheese on top as shown. (You may use plain cheese if Mexican is not available, though it may not taste as it should)
4. Cover with some high raised lid to prevent splattering & microwave for one and a half min max. (for 2-3 chips per plate) This will melt the cheese. Enjoy it hot. Very good, crunchy & filling.
