Ingredients: (serving for 4-6 people)
Onion (2 medium), Tomato 2-3, Ginger-garlic paste, capsicum 1 big, carrots chopped & peas (use ready-made carrot-peas-corn mix packet or Mix veg pkt) & spices (hing, cumin/zeera, salt, red chilli pd, turmeric pd, garam masala, amchur pd.

1. Chop onions & tomatoes.
Take some 3 T oil in a karahi or pan & add cumin/zeera seeds and pinch of Hing or asfoetida powder.
2. After they crackle, add chopped tomatoes, & 1 tsp of ginger-garlic paste, and saute for a while. Add spices: turmeric pd, red chilli pd, coriander/dhania pd. Saute for 5 min.
Take some 3 T oil in a karahi or pan & add cumin/zeera seeds and pinch of Hing or asfoetida powder.
2. After they crackle, add chopped tomatoes, & 1 tsp of ginger-garlic paste, and saute for a while. Add spices: turmeric pd, red chilli pd, coriander/dhania pd. Saute for 5 min.
3. Add the carrot- peas mix pkt and stir. Add some corn too (optional) if its not in the packet. Add some more spices: salt to taste, Dhania pd, chilli pd or red crushed pepper, Garam masala. Stir & then cover it. Leave on medium flame for 5-7 min. Check to see if soften & almost done. 4. Add chopped capsicum. (You may add 3-4 Tbs tomato paste for richer color). Mix & cover for 2-3 min & then open it. Saute for a while to dry it.
Sprinkle some more Garam masala & chopped coriander on top before serving.
